Craving carbs?? Omg, this recipe will hit the spot & is soooo delicious! We had this for dinner the other night & Bre went for seconds, she even opted to eat it as leftovers! If you’re cutting carbs or watching your intake feel free to swap out the linguine pasta for zoodles (zucchini noodles) or load your plate with roasted veggies & top with the chicken & sauce.

Tuscan Herb Chicken Pasta:

Ingredients
Tuscan Herb Seasoning:
- 2 tablespoons: ground rosemary, dried basil, dried parsley, garlic powder, onion powder, sweet paprika, dried marjoram
- 1 tablespoon: red chili pepper flakes, dried thyme, black pepper, lemon zest
For the chicken:
- 3-4 fillets boneless skinless chicken breasts
- Half Tuscan Herb Seasoning
- 1 teaspoon salt & pepper
- 1 teaspoon minced garlic
- 1 1/2 teaspoons garlic powder
- 2 tablespoons extra virgin olive oil
For the Pasta:
- 1 package Linguine Pasta
- Half Tuscan Herb Seasoning
- 3 Roma tomatoes
- 1 tablespoon extra virgin olive oil
- 2 tablespoons butter
- 2 teaspoons minced garlic
- 1/2 cup sour cream
- 1/2 cup cream cheese
- 1 tablespoon lemon juice
- salt and pepper to taste
- Shredded Parmesan
- lemon wedges/parsley for garnish (optional)
Instructions
For the chicken:
- Clean chicken, I like to do a quick salt bath. But please clean your chicken.
- Cut each chicken breast in half lengthwise. If your chicken breasts are labeled thin cut, you can skip this step.
- Season chicken with minced garlic, garlic powder, onion powder, half Tuscan Herb Seasoning, salt & pepper.
- Heat the olive oil in a large pan over medium-high heat. Add the chicken in a single layer. Cook for 4-5 minutes per side or until golden brown and cooked through.
- Remove the chicken from the pan and cover to keep warm. Once cool enough thinly slice crosswise.
For the Pasta:
- Boil water for Linguine, cook until al dente 9-11 minutes.
- Reserve 1/2 cup pasta cooking water.
- Heat butter in the pan over medium heat.
- Add minced garlic, let cook down.
- Add Roma tomatoes, remaining Tuscan Herb Seasoning, salt & pepper. Cook, stirring till softened 2-3 minutes.
- Stir in sour cream, cream cheese, half parmesan, pasta cooking water, into tomato mixture. Bring it to a simmer.
- Stir in pasta.
- Stir in the lemon juice, and salt and pepper.
- Optional: Serve chicken on top of pasta or mix chicken into pasta mixture.
- Serve with lemon wedges & parsley (optional)
Note: If using Zoodles I find it best to add sauce on top after cooking zoodles to avoid a mushy texture.
